Nut Butter Protein Cookies

Prep time: 25 minutes | Ready in: 40 minutes

 

Ingredients:

 

Dry:

1 C Goopea Breakfast Mix

½ C chickpea flour (all-purpose can work also)

½ tsp baking soda

 

Wet:

2 flax eggs (2 Tbsp ground flax + 2 Tbsp water)

½ C coconut oil or plant-based margarine

½ C Peanut butter (use sunflower seed butter for peanut-free)

½ tsp vanilla extract

 

Directions

1. Preheat oven to 325F

2. Mix up flax eggs and let sit in fridge 15 minutes

3. Mix Goopea, chickpea flour, and baking soda together in a medium bowl

4. Beat coconut oil with peanut butter and soaked flax egg

5. Add Goopea mixture to peanut butter mixture and mix until combined

6. Roll dough into 1 inch balls and press lightly onto parchment-lined cookie sheet

7. Bake @ 325F for 13 minutes, let cool and enjoy!
