Nut Butter Protein Cookies

Prep time: 25-minutes | Ready in 40-minutes


2 flax eggs (2T ground flax + 2 T water)

1 C Goopea Breakfast Mix

½ t baking soda

½ C chickpea flour (all-purpose can work also)

¼ C coconut oil

½ C Peanut butter (use sunflower seed butter for peanut-free)


1. Preheat oven to 325F

2. Mix up flax eggs and let sit in fridge 15 minutes

3. Mix Goopea, chickpea flour, and baking soda together in a medium bowl

4. Beat coconut oil with peanut butter and soaked flax egg

5. Add Goopea and baking soda and mix until combined

6. Roll dough into 1 inch balls and press lightly onto parchment-lined cookie sheet

7. Bake @ 325F for 13 minutes, let cool and enjoy!
