Festive Roasted Beet & Red Onion Popcorn
If you are like me, I love to see the extravagant holiday treats and delicacies that people create. I am constantly glued to my screen wondering what Martha Stewart if crafting (have you tried her Acorn Squash with Mixed-Grain Stuffing?). But I must admit, I don’t have the time to spend hours in the kitchen to make holiday treats – I would rather be in the rumpus room spending the holidays with friends.
Now get this, what if I told you that you only need three ingredients and will take you under 10-minutes to make a festive holiday treat? It even has protein in it, so is what I consider ‘healthy’ for a holiday treat. This also makes the perfect easy vegan snack.
Gourmet Roasted Beet & Red Onion Popcorn
Prep Time: 5-minutes
Cook Time: 5-minutes
Yields: Approximately 7 cups of popcorn
Ingredients
¼ c of Popcorn Kernels
5 Tbsp of Extra Virgin Olive Oil (We Recommend the Dill Infused Olive Oil from 4Oak)
3 Tbsp of Roasted Beet & Red Onion Instant Hummus Powder
Optional: Fresh Dill
Note: At home I use an air-popper, however, this can be done using the stove pop method also.
Instructions (with photos):
1. Using your air-popper, pour ¼ c of popcorn kernels into the machine and prepare popcorn.
2. Meanwhile, put 5 tbsp of olive oil into a small bowl and mix 3 tbsp of Hummus Powder to soften the powder. Leave for at least 15-seconds.
3. Add olive oil and hummus powder mixture to prepared popcorn
4. Mix with a wooden spoon until the entire batch of popcorn is coated.
Instructions:
- Using your air-popper, pour ¼ c of popcorn kernels into the machine and prepare popcorn.
- Meanwhile, put 5 tbsp of olive oil into a small bowl and mix 3 tbsp of Hummus Powder to soften the powder. Leave for at least 15-seconds.
- Add olive oil and hummus powder mixture to prepared popcorn.
- Mix with a wooden spoon until the entire batch of popcorn is coated.
- Optional: cover with fresh dill weed. Add additional seasoning if desired.
